Ingredients:
- 2 tbsp Olive Oil
- 4 slices bacon, chopped ( I omit this to make it veg)
- 1 onion, chopped
- 1/2 red bell pepper, chopped
- 1 lb small potatoes, cut into chunks
- 4-5 ears corn or 10 oz box frozen corn
- 1 medium zucchini, chopped
- 5-6 sprigs thyme
- 1 bay leaf
- 1 tsp paprika
- 3 tbsp flour
- 4 c chicken broth (I use veg broth)
- 1c milk
- 1c heavy cream
- Salt & pepper
- Dash or two of hot sauce
- 1/2 c parsley, chopped
- oyster crackers or popcorn for on top of the soup
In soup pot, heat oil over med-high heat, Add bacon, cook until crisp. Add the onion & bell pepper and cook until softened (4 mins) Add the potatoes, corn, zucchini, thyme, bay & paprika and cook 4 mins. Sprinkle the flour into the pot, stir and cook 1 min. Gradually stir in broth and simmer until thick. Stir in milk, cream, and parsley and simmer until potatoes are tender, about 8 mins.
Season to taste with salt, pepper, & hot sauce. Serve with crackers or popcorn
