Corn Choup

This is one of my favorite soups. It is in one of the Rachel Ray cookbooks. This makes quite a bit and it is pretty healthy the vegetarian way.

Ingredients:
  • 2 tbsp Olive Oil
  • 4 slices bacon, chopped ( I omit this to make it veg)
  • 1 onion, chopped
  • 1/2 red bell pepper, chopped
  • 1 lb small potatoes, cut into chunks
  • 4-5 ears corn or 10 oz box frozen corn
  • 1 medium zucchini, chopped
  • 5-6 sprigs thyme
  • 1 bay leaf
  • 1 tsp paprika
  • 3 tbsp flour
  • 4 c chicken broth (I use veg broth)
  • 1c milk
  • 1c heavy cream
  • Salt & pepper
  • Dash or two of hot sauce
  • 1/2 c parsley, chopped
  • oyster crackers or popcorn for on top of the soup

In soup pot, heat oil over med-high heat, Add bacon, cook until crisp. Add the onion & bell pepper and cook until softened (4 mins) Add the potatoes, corn, zucchini, thyme, bay & paprika and cook 4 mins. Sprinkle the flour into the pot, stir and cook 1 min. Gradually stir in broth and simmer until thick. Stir in milk, cream, and parsley and simmer until potatoes are tender, about 8 mins.

Season to taste with salt, pepper, & hot sauce. Serve with crackers or popcorn
